Step 30 = Chicken Kebab Skewers.

Gather together…
500g raw chicken fillets (skinless and boneless), cut into approx. 8 chunky, bite-size pieces with scissors.
2 tbsp yoghurt.
2 tsp curry powder.
1 red pepper, cut into 8 chunks.
1 yellow pepper, cut into 8 chunks.
1 red onion, cut into 4 chunks (this needs to be chunky so it doesn't fall apart during cooking). 1 packet of halloumi cheese, cut up into 8 chunks (this may fall apart when you thread it onto the skewer - if so just scatter extra pieces on the baking tray).
1 medium courgette, cut into 8 chunky rounds (make the pieces chunky so they are less likely to fall off during cooking).
2 corn on the cob, each cut into 4 pieces (watch your fingers when cutting up as they are tough!).
8 cherry tomatoes.
8 baby mushrooms (or 4 medium mushrooms, halved).
2 tbsp rapeseed oil or olive oil.
Serve with…
Toasted, halved pitta breads (1 pitta per person).
Hummus / Mayonnaise.
Green salad leaves.
Get cooking…
1. Use metal skewers (2 per person) or soak wooden skewers in water for 5 minutes to stop them burning in the oven. If you don't have any skewers, just scatter the components directly onto the baking tray (oil it first).
2. Mix the 500g of chicken pieces, with the 2 tbsp of the yoghurt and the 2 tsp of curry powder all together in a bowl and leave to marinate for 10 mins.
3. Preheat the oven to 200 C (180 C fan) or gas mark 6.
4. Chop up the 2 peppers (into 8 chunks each), the red onion (into 4 chunks), the packet of halloumi (into approximately 8 chunks), the courgette (into 8 chunky rounds) and the 2 sweetcorn cobs (cut into 4 parts each).
5. Thread the chopped vegetables, plus the whole cherry tomatoes (x8) and whole baby mushrooms (x8), plus the marinated chicken pieces and the cheese chunks onto the skewers. This is really messy - wash your hands well afterwards and wipe down surfaces with hot water and disinfectant (e.g. tea tree oil) as raw chicken can carry nasty germs.
6. Drizzle the kebabs with 2 tbsp of oil.
7. Bake in the oven for 40 minutes, after 20 minutes turn the kebabs over to ensure even cooking.
8. Serve with halved and toasted pitta pockets, hummus / mayonnaise and salad.
