This started off in our house as a 'what the drivers and pregnant ladies can drink' but it was sooo tasty and drinkable (and easy to make) that everyone wanted some, so now it is our go-to warming Winter drink.
Gather together…
1 pint apple juice (we use the juice-in-glass from our milkman).
Peel from 1 satsuma (or the peel from 1/2 an orange - too much orange peel makes it bitter).
1/4 tsp ground Cinnamon (or 1 SMALL Cinnamon stick, or part of a large stick) - Sainsbury's is in a glass jar (with plastic label sadly) or zero waste shops sell plastic-free and much cheaper spices.
3 whole Cloves OR 3 balls of 'Allspice' (pictured) - Sainsbury's is in a glass jar (with plastic label sadly) or zero waste shops sell plastic-free and much cheaper spices.
Get cooking…
1. Boil a kettle 1/4 full of water.
2. Set up a bain marie (a large-ish heat-proof dish over a saucepan, with 2cm of just-boiled water in the saucepan). We are lucky enough to have this 16cm Judge Vista pan.
3. Pour the 1 pint of apple juice into the heatproof dish on the top of the bain marie and add the citrus peel, Cinnamon and the Cloves (or the Allspice).
4. Heat the bain marie set-up gently on the hob - on a LOW heat - for 5 minutes (or until the desired drinkable temperature is reached).
5. Turn off the heat (so you don't boil the pan dry - you only put a 2cm depth of water in a bain-marie as you don't want the boiling water touching the top dish and scalding the contents).
6. Ladle into heatproof cups and enjoy.
